Weekend Food News

The weekend begins and I am thinking about the meal of the day….I use to own a small cafe, limited seating and a great menu…..but that was younger days…..I also use to write a food blog, The Food Nazi, but time made me give it up in favor of IST……so from time to time I enjoy writing some food news or even some recipes depending on my mood.

Speaking of recipes……

Bags of mixed baby peppers, 5-6cm long and in red, yellow and orange, are available from most supermarkets (they’re sometimes labelled “chiquino”). They vary in size, so use more or less of the filling as required. Serves four to six.

2 tbsp olive oil
1 large bunch swiss chard, trimmed, stalks and leaves finely sliced
Salt and black pepper
2 garlic cloves, peeled and crushed
2 mild red chillies, deseeded and finely chopped
2 tsp dried oregano
30g pine nuts, lightly toasted and roughly chopped
50g pecorino romano, finely grated
80g mozzarella block, roughly grated
500g mixed baby peppers (ie, about 20 baby peppers)

Heat the oven to 200C/390F/gas mark 6. Heat the oil in a large saute pan on a medium-high flame, then fry the chard, a quarter-teaspoon of salt and a generous grind of pepper for 15 minutes, stirring often, until the stalks are soft and starting to brown. Add the garlic, chilli and oregano, fry for another minute, then take off the heat. Leave to cool, then stir in the pine nuts and both cheeses.

Optional:  I mix in some Ras al-Hout seasoning….

Today I would like to write about some health issues around our food.

But first a little food news from the presidential trip…..

When President Donald Trump sits down for dinner in Saudi Arabia, caterers have ensured that his favorite meal — steak with a side of ketchup — will be offered alongside the traditional local cuisine.

This should explain everything…….a beautiful steak with ketchup….sounds like a 6 year old’s meal…..

First, is avocados…..it appears that people are injuring themselves when cleaning an avocado…….

Avocados are all the rage. So much so that Huffington Post recently called the opening of New York’s first avocado bar “painfully trendy.” Turns out avocados are also, quite literally, part of a painful trend. Emergency room doctors are reporting an increase in the number of amateur chefs winding up with serious “stab and slash” injuries as they attempt to cut through the soft flesh and remove the hard pit, reports the Times of London. The injury even comes with its own name: “avocado hand.”

“I had to go to the [ER] and get three stitches and I have lost most of the sensation in my finger,” Freya Watson, a TV producer in London, tells Vice’s Munchies. “When I was in the [ER], there was a woman with the exact same injury.” Sure enough, people are posting pictures with hashtags like #avocadoinjury, and Simon Eccles—secretary and former president of the British Association of Plastic, Reconstructive, and Aesthetic Surgeons—tells the Times he sees four patients a week with avocado hand. So if you’re unskilled yourself, maybe watch a few tutorials before attempting to dissect

Okay people it is NOT rocket science…..you use the back end of a chef’s knife a good whack and twist and the pit will come out very easily.

Don’t know about you but I would never admit that I could not eat fried chicken without injuring myself…..

Lastly, this one is for all those people that must eat “bait”….sushi……

Beware your next Seattle roll; doctors say it could contain something that should never be found in sushi (besides cream cheese): a “worm-like” parasite. A paper published Thursday in BMJ Case Reports says cases of anisakiasis are on the rise in the West due to the increasing popularity of sushi and other dishes involving raw or under-cooked fish. The report gives the example of a Portuguese man who was suffering vomiting, fever, and stomach pain. He told doctors he had recently eaten sushi, and they discovered an anisakis larva attached to his stomach lining, CTV News reports. According to CNN, the anisakis is a parasitic worm that lives in mackerel, squids, salmon, herring, cod, red snapper, and halibut.

There’s no treatment for anisakiasis, which can also cause bowel obstruction and digestive bleeding, besides physical removal of the anisakis larva, which can require surgery, the Guardian reports. Anisakiasis is common in Japan due to the prevalence of raw fish in the diet, with between 2,000 and 3,000 cases diagnosed per year. But cases are starting to pop up in the US and elsewhere in the West. To avoid getting the parasite, patronize high-quality sushi restaurants. “Properly trained sushi chefs can detect anisakis larvae,” one doctor says. “They are grossly visible in the fish.” Or if you’re making sushi at home, freeze the fish for at least four days beforehand to kill the larvae

Safety Tip:  If you must eat fish…then cook the damn thing and avoid the ER.

Cinco de Mayo……

Is that a holiday for mayonnaise?

NO it is a Mexican day to celebrate and we Americans with our hate for anything immigrant like will consumer millions of glasses of beer….and eat tons of guacamole……

Speaking of avocados……..

As avocado lovers prepare to ingest a massive amount of guacamole during the upcoming Cinco de Mayo holiday, Bloomberg explains why that guacamole will come at a heftier cost: The price of avocados has set a record, more than doubling since last year. This higher price tag will be reflected both at the grocery store and in US restaurants that are finding creative ways to serve the trendy fruit. We break down why you’ll be forking over a pretty penny for that tasty avocado toast:

  • US consumption of avocados has sky-rocketed. Mexico provides 82% of the avocados consumed in the United States. Since 2000, shipments have increased from 24 million pounds to a whopping 1.76 billion pounds in 2015. This astronomical rise has raised ethical questions around the crop’s environmental and social impact.
  • Worldwide demand is up, too. The avocado trend is going global, with European countries as well as China asking for more of the fruit. Shortages in New Zealand even sparked avocado thefts, reports the BBC, while Mexican exports to China are especially booming, growing at a rate of 250% per year.

Avocado growers had a bad year. Avocado crops tend to vary, yielding more growth one year, less growth the next. A smaller crop is expected this season in Mexico as well as California, where a 44% decrease has been predicted. And a growers strike in Mexico last year did not help matters.

So be prepared to spend more for you festivities…..enjoy and be safe……

Saturday in the park it feels like the 4th of July….Chicago….

A day of rest and relaxation and time to do something different…..what better subject than food?

In the past I use to write a food blog called “Food Nazi”….it was just too much to handle two blogs so I decided to just incorporate my old foodie blog into IST from time to time….

How many of my readers do the grocery shopping?  Ever wonder why you seem to spend more money than you intended?

If so, then I have you answer for you……

It happens to everyone: Hit the supermarket for 1 or 2 items and walk out with 1 or 2 bags of groceries.

No one forced you to stock up on fresh, juicy fruit.

Nor did anyone urge you to snap up a bag of crunchy snacks or sample a few new condiments.

But advertising and marketing don’t end when you turn off your TV, radio or cellphone.

Retailers and manufacturers are putting more dollars into front-line efforts in the stores themselves, says Paco Underhill, founder of Envirosell and author of “Why We Buy: The Science of Shopping.”

My Sunday begins with news that we will have even more hot weather……and little to no rain…..I want cool….I want crisp cool air…..I wanna beer.

Beer!  Me?  I prefer those dark Lagers like Sam Adams Boston Lager and Modelo Negra…..I will drink a Guinness American Blond…but only if there is no other…….but just how much good will those beers do?

We’ve all read about how great red wine is for our health, and how the French and the Italians, who love their wine, have a lower rate of heart disease than Americans. The belief is that antioxidants called polyphenols, derived from the skin of the grape, which are more prevalent in red wine than white, help protect the cardiovascular system from disease. The jury is still out on the truth of these health claims, since studies, as often is the case in matters of health, have fallen on both sides of the debate. Still, we know that a glass or two of wine a day won’t hurt us, and the relaxation and stress reduction that imbibing affords is an indisputable plus. Most doctors will say, “Cheers!” as long as your drinking is controlled, responsible and moderate, and there are no other health factors to consider (like diabetes or alcoholism, for instance).

Food Nazi: All American Burger

It is Saturday and Summer is winding down…..time to fire up the grill and get busy.

A little something I would post in my food blog, The Food Nazi, if it were still active…..but since it is not….I will do the honors here….

I think that a food prep should be traditional….I am not a fan of these trendy dishes that so many swoon over….there is one dish that I firmly believe should be prepared the old fashion way…..the all delicious hamburger.

Me?  I like about 2/3 lb of meat all beef patty……medium….served with a toasted bun with mayo and spicy brown mustard…..period.  Any salad stuff belongs on the side with bleu cheese dressing.

I bring up the burger thing because a new joint has opened in my area….27th Avenue Burger Bar….catchy name and one would expect a good variety of burgers would be offered….well here are the choices you will have……

They’re not your typical burgers. Sure, you can get the Classic American Cheeseburger, but for those with adventure on their minds and palates, there are:

▪ The Snout ($10), an adouille, pork, boudin and bacon patty with bacon, ketchup, pork belly mayo, hog head cheese, lettuce tomato and pickle;

▪ The Billy Goat ($12), ground goat patty with curried mushroom, mozzarella, spinach and tzaziki;

▪ The Farm House ($12), an organic beef patty with fried egg, bacon, comeback sauce, arugula, heirloom tomato, red onion, mustard and locally made Country Girl cheese on a potato bun.

▪ The Crabby Patty ($12) might satisfy fish fans: A seared crab cake with crawfat remoulade, fire roasted corn and pepper chow chow, spring mix, pickled shallots and pimento cheese.

▪ The Gardener ($8) makes sure vegetarians haven’t been forgotten. It’s a cauliflower steak patty with sundried tomato aioli, cilantro and arugula.

Homrighausen said she’s already seeing customers trending toward The Farm House as well as Border Jumper ($8), a chorizo patty with black bean puree, poblano aioli, jalapeno ketchup, pico de gallo, arugula and avocado, and Buffalo Bill ($12), a smoked bison patty with housemade barbecue aioli, ketchup, onion strings, bacon, sliced avocado, lettuce, tomato and butter pickles

Now the classic American Cheeseburger will set you back $8…..I can go to Burger King and get 2 whoppers for that price……without all the cheesy trendy crap.
These people are just giving the all American burger a bad name……a soul sucking fad…..
This restaurant is in South Mississippi……I do not think that the sophisticated tastes of “good old boys” will find this menu very appealing.
I love burgers…I use to do reviews of local burgers…my rating system was pickles….NO pickles was the best and 5 pickles was the worse……but I believe that there is only one type of burger….BEEF!
The rest are just dolled up sandwiches…..
DAMMIT!  Now I gotta go cook me a burger…..have a good day my friends and I will have a burger for you.

Food Nazi Speaks

Day breaks on another Saturday and I will try to sit back and enjoy my couple of days away from the desk…..my better half has challenged me to a game of Scrabble……and today is the Gold medal game of Handball, a great sport that combines basketball with water polo without the water and little bit of volleyball thrown in for good measure.

But before all that I must eat…..and speaking of food……

Back in the day I thought I could handle multi-blogs….I had a state blog and a food blog, Food Nazi, as well as IST….it got to be a bit much so I slimmed it down to this blog that gets all my attention…..

Food Nazi?  Yep, I do not appreciate food trends and fads….food should be prepared the way it was intended and that means traditionally.  I have no time for food art….if art is what you are after try a museum…..in food taste is everything.

It is the weekend and I try to post on stuff that has little to do with the day to day posting here just to give my loyal readers something different for a couple of days…….

Today I would like to talk about our health….when you visit the doc you are usually told about your “good cholesterol” count, right?

You can improve that score by eating more olive oil instead of the fatty crap you normally use….and of course since it is healthier it has got to be more costly……but I need to tell my readers….”buyer beware”!

Walk into your kitchen and pick up your bottle of olive oil. You know, that health-promoting nectar of Mediterranean age-defying prowess, lubricant of pasta, the only thing that makes your kale salad palatable? Yeah, that stuff is almost certainly not what you think it is.

That’s because unless you’ve plucked your own olives from your own backyard grove and crushed the fruit and pressed the oil yourself, that slippery substance was likely cut, adulterated, and deceptively labeled before it reached the bottle in your hands. “It’s amazing how many people there are in America who don’t even know what the real thing tastes like,” laments Larry Olmsted, author of the new book Real Food, Fake Food: Why You Don’t Know What You’re Eating and What You Can Do About It and our guest on this week’s episode of Bite. “Most oils sold in the United States are fake,” he writes.

Go Ahead And Eat It!

I smile….today I begin 3 days of total relaxation…..let the holiday weekend begin!

Before I start….this morning was a good day in the garden…..

As long as we are starting with the food thing……..

Remember back in the day when we were told that everything edible for breakfast was bad for us…eggs, bacon, butter….I always ate those items in moderation so I never worried about eating them.

Finally a study on butter……

We might all owe Paula Deen an apology. A study published this week in PLOS ONE finds no connection between eating butter and an increased risk of cardiovascular disease. On the contrary, researchers found eating butter might actually make people slightly healthier by reducing the risk of diabetes. Researchers from Tufts University looked at nine previous studies of more than 636,000 people who ate between one-third a tablespoon of butter and three tablespoons of butter per day, Live Science reports. For the purposes of the study, they called one tablespoon of butter a daily serving. Researchers found that eating butter was in no way associated with a risk of stroke or heart disease and reduced the risk of type 2 diabetes by 4%.

“Hallelujah,” Gizmodo responds to the study, pointing out that warnings about the dangers of butter have been around since the 1970s. But that doesn’t mean it’s time to eat an entire butter sculpture. Researchers say that while butter may actually be healthier than sugars and starches, it’s probably still worse for you than olive oil or some margarines. “Overall, our results suggest that butter should neither be demonized nor considered ‘back’ as a route to good health,” researcher Dariush Mozaffarian says in a press release. Researchers did find that eating butter led to a 1% higher risk of death, though they chalk that up to the fact that “people who eat more butter generally have worse diets and lifestyles.” (This guy found edible butter dating back to Jesus.)

Two things…..one, butter is so much better in cooking than margarine and two, I would never apologize to that racist cow Deen……

Health Update

Finally a few days away from the mindless dribble of the Right and the profound constipation of the Left…..today I would like to talk about food.

But first…have you ever had an onion start sprouting in storage….I cut the top off with the sprouts and plant them….the last time I got 11 small red onions from my effort…..

And now for the harvest of the morning….my first yellow tomato of the season…..

And finally with home grown ingredients I will make fresh salsa…

On to more important things…..I do not diet per se….I do use a modified version of the Mediterranean diet….I am not a fan of fish so it is off the menu….I read an article about this diet and its possible good results….

Women who’ve survived breast cancer and are looking to prevent a recurrence may be encouraged by news out of a major cancer conference: that adhering to a Mediterranean diet (lots of fruits, veggies, fish, and olive oil) may help fend off the disease’s return, the Guardian reports. For their experiment, revealed at the American Society of Clinical Oncology’s annual meeting in Chicago, researchers at Piacenza Hospital in Italy studied two groups of women who had been treated for early breast cancer: 199 who ate Mediterranean-style (including an allowance for one alcoholic drink daily) and another 108 who ate what they usually did, but with healthy-eating input from a dietician. After three years of following these diets, none of the ladies who went Mediterranean suffered relapses, while 11 women from the other group did. Science World Report notes these results add onto the news from another, much larger recent JAMA study that found a Mediterranean diet rich in extra-virgin olive oil led to a 68% reduction in the risk of developing breast cancer.

There are drawbacks to the new study—notably, the small sample size, the relatively short follow-up time of three years, and other methodology issues, critics say. “People were asked to participate in one diet or the other,” the Dana-Farber Cancer Institute’s director of clinical research tells the Guardian. “There is no information about the activity level or change in weight which, for most of the lifestyle research, one needs to be aware of.” And the CEO of UK charity Breast Cancer Care says that while any info about how to possibly keep breast cancer from coming back is a “welcome addition to our toolbox,” there’s no universal panacea. “Lifestyle choices like eating a well-balanced diet, [partaking in] regular exercise, and maintaining a healthy weight can all help reduce the risk of cancer coming back, but they can’t prevent it completely,” she notes, per the Independent. (America is slowly but surely moving toward a more Mediterranean way of eating.)

For my last piece of health news for my readers…..

The Pharma companies spend billions on research and then make many billions after they release their new drug and then there are a wealth of lawyers that sue the companies after that…….

The problem that few know of is that of the antivirus game……..

The Antivirus industry has a dirty little secret that they really don’t want anyone to know. Despite the claims of their marketing departments, their products are not all that effective. Many of them are only protecting against at best 80% or 90% of the threats out there in the wild at any time, and their protection against ransomware is very bad.

Let’s look at that in more detail. AV products need to protect against two general types of threats: ones that are known and threats that are unknown. The ones that are known, they have a signature for so that they can detect the threat and get rid of it. This is called reactive detection.

And then is the cost of your meds……and as usual it is Obama’s fault that they are so damn expensive……

Evidence is mounting that doctors who receive as little as one meal from a drug company tend to prescribe more expensive, brand-name medications for common ailments than those who don’t.

A study published online Monday in JAMA Internal Medicine found significant evidence that doctors who received meals tied to specific drugs prescribed a higher proportion of those products than their peers. And the more meals they received, the greater share of those drugs they tended to prescribe relative to other medications in the same category.

Food Nazi Speaks (Again)

Once again on the weekend the old Food Nazi has something to say about food and the way we Americans tend to flock to trends and fads……tell me how many of you eat kale?  Why?  It is a horrible tasting thing that at best makes a good garnish.

All that is this whole crappy thing about eating healthy.  We are told that a drink that looks like pond scum is good for you.  Or that some berry from the East has some sort of magic healing power.

A whole industry has been devised to help you eat healthy…..meanwhile you drop dead anyway.

There is the thing…..is it always that healthy?

Like many people, one middle-age woman in an Israeli study just couldn’t seem to find a diet that worked. The problem: The seemingly healthy tomatoes she was eating multiple times per week were actually causing her blood sugar levels to spike. The New Zealand Herald reports the researchers from the Weizmann Institute of Science have made a key insight in the science of dieting, discovering that the bodies of different people can respond differently to the exact same meal—even an apparently healthy one. “There are profound differences between individuals,” researcher Eran Segal says. “In some cases, individuals have opposite responses to one another.” What that means is a diet that works for one person might be ineffective for another, and the future of dieting could lie in meal plans created specifically for individuals.

Researchers monitored 800 volunteers for a week and surveyed nearly 47,000 meals with a focus on the glycemic index, which ranks foods based on how they affect blood sugar, according to a press release. Doctors and nutritionists have long used the index to recommend diets, believing it to be a constant for everyone. Instead, the study in Cell found that the glucose levels of volunteers responded differently to the exact same foods, independent of age or BMI, the Herald reports. “I think about the possibility that maybe we’re really conceptually wrong in our thinking about the obesity and diabetes epidemic,” Segal says. The assumption is that people who gain unwanted weight are ignoring advice because they’re unable to control their eating—”but maybe people are actually compliant, but in many cases we were giving them wrong advice.” (It was easier to be thin 20 years ago.)

If you want to eat healthy……then use your head and not the TV…

Food News For All

Enough with the politics of everything……why not lighten up the posts a bit?  After all the relaxation of the weekend is approaching…..

We Americans love our fads……fads in politics, entertainment, clothing and especially in our food….Kale comes to mind.

I use to have a food blog but it got no traffic and it was a waste of time so from time to time I will post on food…..I would give recipes but Americans would not know good food if it bit them in the ass…..Kale comes mind.

Me….I am a meat eater….I was born a predator…….and high on my list is steak…..a filet is best….no waste….and then second is a really good burger….meat bread little mayo and brown mustard….period.  The greens are for a salad…..Kale comes to mind.

But I read an article that made me step back and go eeewwww……..

A close look at ground beef reveals some pretty disturbing stuff, a Consumer Reports investigation found. Some 300 packages containing 458 pounds of ground beef were bought at stores of all kinds in 26 cities, and every single one “contained bacteria that signified fecal contamination,” per Consumer Reports. That’s more than just gross: It can cause serious illness when beef isn’t cooked to the recommended 160 degrees Fahrenheit. Any meat can make you sick if not cooked properly, Consumer Reports notes, but ground beef is especially risky because cows raised on crowded feedlots tend to have manure on their skin, which contains bacteria that can end up in the meat during processing—and bacteria from one cow can end up mixed with that of many other cows.

The testing also revealed antibiotic-resistant “superbugs” in some of the meat, though they were a lot less prevalent in beef labeled “grass-fed organic,” which tended to have less bacteria overall. Experts advise consumers to buy sustainably raised beef when they can—and always make sure it’s cooked all the way through. “Remember, when it’s ground beef, you’re taking it and grinding the bacteria from the surface of the beef into it,” Consumer Reports‘ director for food safety tells CBS. “So unlike a steak, you’re really moving all that bacteria all around the beef. So it’s especially important for ground beef, to cook it to 160 degrees to be absolutely safe.”

EEEEEWWWW maybe….but will it stop me from my burger……NOT A CHANCE!  I cannot say the same for…….Kale.

Next up….are you a ketchup person?  Some people will put ketchup on just about everything….but it is not made for that….Kale comes to mind.

But there seems to be a controversy brewing in Israel…..and it has nothing to do with the Palestinians…..or even Kale for that matter……

The iconic Heinz tomato ketchup will no longer be called ketchup in Israel after the Ministry of Health there ruled that the product did not contain enough tomato solids to be classified as ketchup.

Instead, it will move a step lower and be sold as tomato seasoning, Ynet News reported, according to the Times of Israel. The ruling however will only affect the Hebrew label version, the newspaper said.

Israeli trade standards require ketchup products to have at least 41% tomato concentrate. Heinz’s competitor in Israel, Osem tested its ketchup and alleged that it contained only 21% concentrate.

The newspaper said the ruling by the ministry was the result of a lobbying campaign by Osem, which controls about two-thirds of the market for ketchup in the country.

In a letter sent to retailers in January, Osem claimed that tests of Heinz ketchup found it only contained 21% tomato concentrate instead of the 61% advertised.

I think it is more to this than the paste content.

I think it is a shot at the Obama administration because it is not as warm to Israel as they would like them to be.

Why do I think this?

You see Obama’s SecState is John Kerry whose wife is a Heinz from the family that the ketchup is named for……come one….Israel could not be that petty, right?  If you think that then you do not know as much as you think about Israel.

So the next time you are in Israel and want some fries (chips) do not forget to ask for “tomato seasoning” if you want the good stuff.

A final thought….is it ketchup or catsup?
